Pasture-raised chicken liver is a completely different ingredient from what you find at a grocery store. Rich, clean, and deeply flavored without the bitterness that turns many people off of commercial liver. The key is not to overcook them — sauté in butter with shallots and a splash of sherry over high heat, two to three minutes per side, and serve pink in the middle. Simple, fast, and extraordinary. Also excellent as a pâté, in dirty rice, or chopped into a pan sauce.
