Flanken style short ribs are cut thin across the bone — typically about 2 inches — making them one of the most versatile and flavorful cuts on the animal. Our flanken ribs come from pasture-raised Hereford-Angus cross cattle here in Salem, NJ, packed at approximately 12 oz per pack. The cross-cut style exposes the bone marrow and allows marinades to penetrate deeply, making these ribs exceptional for Korean-style galbi, grilled over high heat, or braised low and slow until tender.
